| CLEAR LIQUID: This diet is intended for short-term use or used as a transition diet before advancing to solids. This diet supplies fluid and energy in a form that requires minimal digestion and stimulation of the GI tract. Clear liquids such as broth, juice, gelatin are provided on the meal tray. A clear liquid supplement beverage is available to provide to the patient if additional calories are needed. The house clear liquid diet is nutritionally inadequate for all age groups. The menu can be adjusted to meet additional diet order restrictions, allergies and food preferences. Additional nutrient information on our house diet can be found below. |

| FULL LIQUID: This diet is generally ordered as a transition diet once clear liquids are tolerated. This diet can be used after oral surgery or surgery of the fact/neck area, for chewing/swallowing problems, or for esophageal or stomach disorders when solid foods cannot be tolerated because of stricture or anatomic irregularity. Dairy products such as milk-based soups, milkshakes, custard, pudding, and hot cereal along with pureed fruit, juice or nectars that contain pulp may be provided on the Full Liquid Diet. The diet should be advanced to provide adequate nutrition when tolerated. The Full Liquid Diet is contraindicated for patients with lactose intolerance or for patients who cannot tolerate thin liquids. This diet provides more calories and protein than a Clear Liquid Diet, however may not meet vitamin, mineral and bioactive substances including fiber needs if used long term. Because it is deficient in vitamins and minerals it is contraindicated for long term use. High calorie/high protein supplements can be ordered to help meet individualized nutrient needs if appropriate.

| POST-SURGICAL TRANSITION DIET: The purpose of this diet is to improve oral intake and tolerance for patients transitioning from a liquid diet to solid foods. Items on the menu are primarily liquid based with some solid food options available to allow for gradual advancement to a general consistency diet. Food items are bland, low fat, liquid/soft in texture, low in fiber with small portions. Patients may select items to snack on or eat throughout the day. This diet is intended for short term use when transitioning to a full solid tray. Food items provided at meal time may not meet a 2000 calorie diet and RDI’s of vitamins/minerals. | BLENDERIZED LIQUID:Indicated for those patients with head, neck, mouth trauma, or wired jaw. Foods are pureed in a blender, thin enough to go through a syringe/straw. Nutrients can be modified to meet individual needs. The house menu supplies over 2300 calories per day however the diet may not meet all vitamin and mineral requirements. Additional supplementation may be necessary if used long term. |

DYSPHAGIA(also known as Dys1/IDDSI Level 4 Pureed, Dys2/IDDSI Level5 Minced & Moist, Dys3/IDDSI Level6 Soft & Bite Size): Indicated for patients undergoing surgical procedures/treatments affecting the head or neck, those with certain neurological disorders, those undergoing anticancer treatment, those at risk for aspiration, or for patients needing a modified consistency due to poor dentition. A dysphagia type must be selected for this diet. The menu can be adjusted if necessary to meet additional diet order restrictions, nutrient needs, thickened liquids, allergies and food preferences. High calorie/high protein supplements can be ordered to help meet individualized nutrient needs if appropriate. If proper selection of food is maintained, the Dysphagia Diet is adequate in all nutrients.

| Pureed Diet (also known as Dys1/ IDDSI Level 4 Pureed): is based on modifications of a pureed diet, foods are homogenous and cohesive. No coarse textures, raw fruits or vegetables, nuts, are allowed. Any foods that require bolus formation, controlled manipulation, or mastication are excluded. | Soft & Bite Sized Diet (also known as Dys3 / IDDSI Level 6 Soft & Bite Sized) diet consists of food items that are chopped, similar to a mechanical soft diet. This diet is a transition to a regular diet. Adequate dentition and mastication are required. Patients should be assessed for tolerance of mixed textures. It is expected that mixed textures are tolerated on this diet. Foods are of nearly regular textures with the exception of very hard, sticky, or crunchy foods. Foods still need to be moist and should be “bite-size” pieces at the oral phase of the swallow. Additional nutrient restrictions or liquid consistency can be ordered as needed. |

A calorie level can be ordered with approximately 50-60% of calories coming from carbohydrate, 20% of calories coming from protein and 30% of calories coming from fat. Snacks can be initiated per physician order. . The house diet would be provided to those patients who prefer not to make menu selections. Patients that do make menu selections will be provided items as requested, unless contrary to the diet order. Low lactose foods and decaffeinated beverages are recommended. Oxalate foods may cause stone formation in patients who have lost all or part of the lower bowl.
